Okay, so I’m officially in “oh crap my sister’s wedding is in two months and I have to fit into my Maid of Honor dress” mode.
With an apartment move coming up, last-minute taxes to do, and a few trips planned this month … I’d say I’ve got myself a pretty busy couple of weeks.
And since busy weeks and healthy eating don’t exactly go together like Spongebob and Patrick, I rely heavily on meal prepping to stay on track.
That’s why I absolutely love these Chicken Meal Prep Bowls recipes. Preparing a bunch of different flavors at once means you won’t get bored of having the same meal every day. Plus, batching your meal prep together on a Sunday only takes about 1-2 hours of your time and you’ve got lunch and dinners for the week!

Ingredients
- 1 recipe of Curry Baked Sweet Potato Fries (Cut the sweet potato into cubes instead of fries)
- I recipe of Lemon Roasted Brussels Sprouts
- 1 bundle asparagus
- Olive oil
- Salt and pepper, to taste
- Flame Grilled Garlic & Herb Chicken Breast
- Flame Grilled Southwestern Chicken Breast
- 1/2 cup brown rice, cooked
- 1/4 cup black beans, drained and rinsed
- 1/4 cup corn, drained
- 1/2 avocado, sliced
- 5 cherry tomatoes, halved
- 1/4 red pepper, sliced
- Cilantro, for garnish
- Flame Grilled Black Pepper and Sea Salt Chicken Breast
- 1 zucchini, spiralized
- 1/4 - 1/2 cup pasta sauce
- Olive oil
- Flame Grilled Teriyaki Glazed Chicken Breast
- 1/2 cup brown rice, cooked
- 1 cup broccoli
- 1/2 red pepper, sliced
- Sesame seeds, for garnish
- Green onion, for garnish
- Flame Grilled Honey Mustard Glazed Chicken Breast
- 1 cup raw kale, shredded
- Any vegetables you want!

Instructions
- Preheat oven to 425 degrees F. Prepare the Curry Baked Sweet Potatoes and Lemon Roasted Brussels Sprouts on separate sheet pans. Cut the ends off the asparagus and arrange on a third sheet pan. Drizzle with olive oil, salt and pepper. Bake sweet potatoes and brussels sprouts for 30 minutes, flipping half way through. Bake asparagus for 15 minutes or until done to your liking.
- Arrange vegetables and sliced Flame Grilled Chicken in meal prep bowls. Microwave 2 minutes to serve.
- Cut the chicken breast into slices or cubes. Arrange all ingredients in meal prep bowls.
- Microwave 2 minutes to serve.
- Heat 1 tablespoon olive oil in a medium pan. Cook the zucchini noodles until tender. Drain any excess liquid.
- Place the zucchini noodles in a meal prep bowl topped with pasta sauce and sliced chicken.
- Microwave 2 minutes to serve.
- In a steamer or pan with steam basket, steam the broccoli and red pepper together for 4-5 minutes or until tender.
- Arrange rice, vegetables and sliced chicken in a meal prep bowl. Garnish with sesame seeds and sliced green onions.
- Microwave 2 minutes to serve.
- Top your favorite combination of vegetables, seeds and nuts with Flame Grilled Honey Mustard Glazed Chicken. Then, thank me later. (I'd recommend a light honey mustard dressing with this, or a simple drizzle of olive oil).
